Heavenly Vegan Fudge

This decadent, yet secretly good for you, mouthwateringly delicious fudge is made with superfood ingredients; nuts, himalayan salt, and coconut butter! It just so happens to be vegan, raw, grain-free and refined sugar-free also!!! It has the same slightly gooey, melt in your mouth texture as fudge made from dairy. No one would guess it was actually healthy!!!

If you’ve never tried coconut butter, well, brace yourself…this is quite possibly the most amazing ingredient on the planet. I can’t get enough of it!

Coconut butter is made from raw, pureed coconut meat. “Coconut butter is to coconut oil as butter is to ghee; it’s made from whole coconut flesh, with all the delicious fat and the solids included. The oil and flesh meld together to form a creamy texture that spreads well.” Coconut butter has a ton of nutritional benefits. It’s high in lauric acid which is a powerful immune booster. lauric acid gets converted to a biologically active molecule named monolaurin which effectively kills disease causing bacteria, virus and fungi.

Coconut contains 17 amino acids, it’s exceptionally high in threonine, an amino acid which protects the liver, central nervous system, cardiovascular system, aids the body in the healing process, and supports the formation of collagen (just to name a few). Coconut also happens to be rich in antioxidants, fiber and healthy minerals like manganese, selenium, copper, folate, potassium, iron, magnesium, and zinc! Coconut’s nutritional benefits are hard to beat!!!

Heavenly Fudge

Vegan, Gluten-Free, Grain-Free, Raw, Refined Sugar-Free, Soy-Free, Nut-Free optional
 
Yield: 12 pieces

ingredients:

•1/2 cup good quality unsweetened cocoa powder
•1/2 cup coconut butter, melted or softened
•4 tbsp coconut nectar
•1 tsp pure vanilla extract
•1/2 tsp himalayan salt
•2 tbsp walnuts, cashews, almonds or pecans, optional (highly recommended for protein and satiety)

instructions:

Combine all the ingredients in a food processor or high speed blender, blend until mixture is smooth. Pour mixture into a parchment lined food container, bpa-free silicone mold/tray, or small loaf pan. Chill for at least 30 minutes in the fridge or freezer to solidify. Keep refrigerated, or If you prefer your fudge extra soft like I do allow to warm to room temperature and they will melt in your mouth 🙂  Enjoy!

PS: this fudge also makes a decadent frosting — just allow to get soft and spreadable.

Chocolate Buttercream Frosting

 

Easy Chocolate Whipped Frosting

Words simply cannot do this amazingly delicious chocolate frosting justice.
I am fanatic about buttercream frostings. Basically, if its loaded with butter and sugar, and is creamy I will drooool. As crazy as I am about chocolate (serious self proclaimed chocoholic here) I’ve never really gotten excited over chocolate icing. I’ve always fancy’d myself a strawberry, cream cheese, and go-to vanilla icing gal, but this yummy chocolate frosting changed that for good.

A lot of chocolate frostings out there are overly processed, and overly sweet, in my opinion. This chocolate frosting is not too sweet or too bitter, but just right. You can taste the genuine flavor of the raw cocoa rather than a mouthful of confectioners sugar with a chocolate flavoring. The creamy coconut milk gives this frosting a lighter, more airy consistency that is very pleasing.

Oh, and if you’re not a big coconut fan, don’t worry, you won’t taste any coconut in this frosting, just pure chocolatey goodness!
I warn you, you may have a hard time not eating a whole batch of this frosting by the spoonful!


Chocolate Buttercream Frosting

Vegan, Gluten-Free, Grain-Free, Soy-Free, Nut-Free

Ingredients:

2 tbsp vegan butter or unrefined coconut oil, softened
1 cup vegan, gluten free powdered sugar
1/4 cup full-fat coconut milk (preferably refrigerated overnight to make heavy cream)
1 tsp pure vanilla extract

3 tbsp unsweetened cocoa powder
dash of salt

Note- you could probably use light coconut milk, but I’ve only ever made this with full-fat so I can’t guarantee you’d get the same results.

Instructions:

Take your refrigerated coconut milk, carefully open the can and scoop out the thick top layer (if your milk is not solid, it’s ok, it will still work just fine the frosting just won’t be as fluffy/thick). Save the coconut water at the bottom for later use, or drink it straight from the can. Using an electric or stand mixer, combine butter with sugar and blend together on low until smooth consistency forms. As you mix butter and sugar, add in your coconut milk and vanilla, and continue to mix until blended well. Add in cocoa powder and salt and continue to blend, increasing speed to medium until smooth and whipped consistency is achieved. Chill for best results. Enjoy!

3 Ingredient Cream Cheese Buttercream Frosting

Easy and delicious.

When I decided to make this recipe for a simple cream cheese buttercream frosting, I had no idea just how scrumchilleeumtious (scrum-chilly-um-shus aka extraordinarily scrumptious) it would turn out!

This frosting is so creamy, and rich in cream cheese flavor, it really does just melt in your mouth with heavenly goodness! The delicious flavors blend, and balance so well together. It pairs oh so wonderfully with carrot cake, red velvet cake, anything pumpkin, and yeah pretty much anything if you ask me! (Well, maybe not anything haha).

Not only is this honestly the best cream cheese frosting I have ever had, it is super easy to whip together since it has just 3 simple ingredients making it a winning combo.


Cream Cheese Buttercream Frosting

Vegan, Gluten Free, Grain-Free

Yield: ~2 cups

Ingredients:

1/4 cup vegan cream cheese, room temp (I recommend Tofutti)
1/4 cup vegan butter, room temp/softened
2 cups vegan, gluten free powdered sugar (more makes thicker/sweeter frosting)

Instructions:

In a large bowl or mixer blend butter and cream cheese together.
Add in powdered sugar one cup at a time, and continue to mix until well frosting is well combined.
If frosting is too dry add in a small splash of milk and blend until consistency is smooth and creamy.
Chill for best results. Enjoy!

Easy Strawberry Buttercream Frosting

 

Strawberry Buttercream Frosting (vegan)

Yum! This super simple frosting tastes like a strawberry milkshake and I warn you now you may have a really hard time not eating it all by the spoonful!

Vegan, Gluten-Free, Grain-Free

Ingredients:

1/2 cup vegan butter, room temp
2-3 cups vegan, gluten free powdered sugar
(more makes thicker/sweeter frosting)
1/4 cup fresh strawberries, puréed
2 tsp pure vanilla extract, optional 

Instructions:

Allow butter to warm up to room temperature, or gently heat for a few seconds to soften.
In a large bowl or mixer blend butter and powdered sugar together, stirring in one cup of sugar at a time, and continue to mix.
Add in puréed strawberries and vanilla extract, mix until well combined.
If frosting is too dry add in some vegan milk and continue mixing until consistency is smooth and creamy. Chill for best results. Enjoy!

Ingredients:

2 cups vegan, gluten free powdered sugar (add more for thicker frosting)
1/2 cup vegan butter, room temp
2 tbsp pure vanilla extract
vegan milk of choice, optional, for desired consistency

Instructions:

In a large bowl, mix sugar, butter, vanilla and if necessary, add the milk as you blend with an electric beater on low-medium setting until frosting is smooth and creamy. Enjoy!
